MISSDISH Recipe | RASA’s Gluten-Free Turmeric-Spiced Cutout Cookies

These are the adult version of your favorite sugar cookie, but gluten-free, refined sugar-free, grain-free and vegan. Turmeric is a powerful anti-inflammatory – the active ingredient in the spice is called curcumin, and it only works its magic when paired with black pepper. One of nature’s little mysteries, but lucky for us, they taste delicious together in this recipe. Almond flour is naturally sweet, so only a little unrefined maple syrup does the trick. And no, you’re never too old to cut cookies into cute shapes. Totally acceptable.

Prep: 10 minutes (plus 1 hour for chilling)
Bake: 10 minutes
Makes 12-15 cookies depending on size of the cutter

What You Need:
2 cups almond flour
¼ cup coconut oil
¼ cup maple syrup
1 tbsp turmeric powder
1 tbsp vanilla extract
1 tsp black pepper
¼ tsp baking soda
¼ tsp sea salt

What To Do:
1. Mix almond flour, turmeric, black pepper salt and baking soda in a medium bowl. Separately combine coconut oil, maple syrup and vanilla extract.

2. Add wet ingredients to dry and use a spatula to mix until fully combined. Form dough into a ball, wrap in parchment and chill for at least one hour.

3. Preheat oven to 175C / 350F. Roll dough out between two pieces of parchment paper. If it breaks easily, then it need to chill longer.

4. Use a cookie cutter to create shapes and place on baking sheet lined with parchment. Combine dough scraps and roll out to create more shapes. Bake for about 10 minutes, or until lightly brown and cool.
