‘Top Chef’ Winner Kristen Kish Plans on Opening a Hotel Restaurant
Step one. Win top chef. Step two.
When the Line Hotel named Kristen Kish to the helm of Arlo Grey at their newest Austin based property, the media went wild dreaming up what menu she might possibly create, having come from more intimate, up-scale venues. The winner of Top Chef Season 10, and former chef de Cuisine under Barbara Lynch at Menton, Kish went on to travel, host events, television shows, and write a cookbook, commanding the fine dining world. A definite contrast to Texan fare and a full service menu with hotel hours, Kish had her apprehensions. “I was like, Oh my god, breakfast, lunch, dinner, room service? This is not my wheelhouse.” But, she admitted, she’s a bit addicted to taking a chance and tackling fear. “Something about it was the appropriate challenge. And I was appropriately scared. That’s why I want to do it. I jumped and was like ‘Fuck it, let’s do it. It’s time.’”
Kish's show-stopper will be her version of the ultimate burger. Made from Texas beef (of course), this bad boy will come topped with caramelized onions, lactofermented pickles, Kewpie mayo (“because you got to dirty it up”), and mustard greens, all on a house-baked, soft-on-the-inside-crispy-on-the-out-just-sweet-enough, challah bun. But Kish is taking us beyond the earthly realm with a pommes aligot (an elastically cheesy classic French potato dish) cheese topping. By aerating it, “It covers the burger like a cloud,” she says. “Burgers and this whole grill thing, this is not how I cook. But shit, this is fun.” Check out her Bun Love burger teaser below.
